Caramel Tarts


While we were away our Great Auntie Carmel showed us four girls how to make her popular caramel tarts. Today I gave them a shot and they proved to be such a success (though I do say so myself) that I thought I would share them with you. I highly recommend that you make them!
The method is very brief, but I hope you get it!


Pastry
125 gr (4 oz) margarine or butter
½ cup of Castor sugar
1 egg
1 cup s.r. flour
1 cup p. flour
Cream butter and sugar, beat in egg and fold in flours. Roll out very thin. Cut into circles. Lay in shallow patty pan tins. Cook for approx. 10 min on 180.
Caramel
1 large table spoon of butter
2 table spoon of golden syrup
1 tin condensed milk
Put all ingredients into small saucepan. Cook on medium heat stirring constantly for 3-4 mins. until mixture thickens slightly. Pour into pastry shells, refrigerate till set.

Awwww Rach!!! You would have to put food up to make us all hungry and make our mouths water. Ah well, i guess i will just have to make some!!! Hehe!
