Snickerdoodles

For Christmas we received a Woman's Weekly Cookie cook-book (thank you, Sean, Cassandra and Emma), yesterday I made some snickerdoodles from it. I forgot to add two of the ingredients, but they were still very yummy. Although, they would have tasted sweeter if I had added the cinnamon and sugar :)

And these were the ones I made.

To make 42 Snickerdoodles you will need:
250g butter, softened
1 teaspoon vanilla extract
1/2 cup (110g) firmly packed brown sugar
1 cup (220g) caster sugar
2 eggs
2 3/4 cups (410g)
1 teaspoon bicarbonate of soda
1/2 teaspoon ground nutmeg
1 tablespoon caster sugar, extra
2 teaspoons round cinnamon
1. Beat butter, extract and sugars in small bowl with electric mixer until light and fluffy. Add eggs, one at a time, beating until combined. Transfer to large bowl.
2. Stir in sifted flour, soda and nutmeg, in two batches. Cover; refrigerate 30 minutes.
3. Preheat oven to 180C/160C fan-forced. Grease oven trays; line with baking paper.
4. (Don't forget this part :) Combine extra caster sugar and cinnamon in small shallow bowl. Roll level tablespoons of the dough into balls; roll balls in cinnamon sugar. Place balls about 7cm apart on oven trays.
5. Bake about 12 minutes. Cool on trays.

Those sound good! I love snickerdoodles. But yeah, adding sugar and cinnamon is a big help ;) LOL. I'm always forgetting to do this or that in my baking!

Heh! What a funny name! I dont think iv ever heard of them before!
Heh! My stuff use to always come out flat as any thing becuase i forgot some thing, and i gave up cooking untill lately. Strangly, things i make seems to work these days :)
They look good though :)
